Metzger rum steak

Mosella Schinkenstube - Rumsteak

We only serve regional German products. We know the farmers personally and are familiar with their cultivation and breeding methods. For our Metzger rump steak we use only premium quality heifers*, traditionally roasted with the fat edge left on.

*female bovine animal: the heifer has more marbling in the meat, making it more tender.

 

Saftige Schweineschnitzel

Mosella Schinkenstube - paniertes Schnitzel

from the top leg, culled exclusively from our own stock of animals in the Hundsrück and Eifel area and roasted in butter.

Top leg: the traditional schnitzel (pork chop) cut. Most people cut pork chop from the rear of the shoulder since it slices evenly there, however the meat tends to become dry during cooking.

 

   

Freshly prepared liver

Tuesdays starting at 11:30 a.m. we serve freshly prepared liver with puree and homemade sauerkraut.

We only prepare our liver on the day of slaughter, in order to guarantee you the freshest quality.

 

Pork hock (Grillhaxe)

Fresh Pork Hocks from the oven to your plate

Every Tuesday from 5 p.m. (peak season) – pre-order required. Our pork hocks come fresh from the oven to your plate – piping hot, the way it tastes best!
